S-Alk(en)yl-L-cysteine sulfoxides (Fig. 2.8) in various Allium can be determined for the allien content
of various samples of garlic acid by use of the Waters Pico-Tag method, which employs PITC as
derivatization reagent. The HPLC system used for the Pico-Tag method was a Waters chromatograph
consisting of a UV detector with a wavelength fixed at 254 nm [33]. The origin of this method is
developed by Bidlingmeyer et al. in Waters Associates. In 1984 they had
